Veg Noodle Soup

Here is a simple recipe for a Tan Tan noodle inspired vegetarian/vegan dish.




Makes 4 servings.


Ingredients


  • 500 ml veg stock

  • 125 ml coconut milk

  • Sesame Paste

  • Chilli Oil

  • Rice Noodles

  • 25g Corn Kernels

  • 20g Mushrooms

  • 2 Green Onions

  • 1 Star anise

  • Soy Sauce

  • Vinegar

  • (Optional) Half boiled agg

Method


Toppings:

  1. Sauté corn kernels and keep them aside.

  2. Sauté some mushrooms chopped roughly.

  3. Thinly slice the green part of the green onions and keep them aside.


Soup:

  1. Boil veg stock with the star anise.

  2. Let it cool down, in the meantime add 2 tsp of sesame paste, 1 tsp vinegar and 2 tsp chilli oil in each bowl and mix.

  3. Add 1 tsp sugar and 2 tsp soy sauce to the stock.

  4. Whisk in the coconut milk.


Assembly:

  1. Prepare rice noodles according to package instructions.

  2. Pour in the soup and add the rice noodles to the bowl. Add the toppings next.

  3. Additionally add some more chilli oil. Place half boiled egg if desired.
